Introduction :
The safe and dignified dietary need among dysphagic patients have drawn much social attention in recent years. The HKEC Nutritional Care Committee has collaborated with the Cluster Quality and Safety Office to promote dysphagia diet with soft meal mooncake event at five cluster hospitals in HKEC.
Objectives :
1. To promulgate safe consumption of soft meal diet among dysphagic patients in effort of multidisciplinary approach; 2. To provide information on availability and preparation of soft meal diet to patient and family; and 3. To promote organizational image through initiation of quality and safety festive event
Methodology :
Vendors were invited to a food tasting event 2 months prior for Speech Therapy (ST) team to test and give feedback on the consistency of soft meal mooncake, and to ensure safe consumption by dysphagic patients. Dietetic team reviewed the nutrients and allergens of the product and assessed the suitability for therapeutic diets. Patients from the Department of Clinical Oncology, Medicine and Psychiatrics were recruited. With the extended service provision to day ward patients, over 600 mooncake orders were recorded for participants over five cluster hospitals. The Patient Resource Centre renewed the design of soft meal information card containing QR codes for 1) promoting dysphagia diet information with soft meal purchasing availability and 2) training videos on food preparation from Non-Governmental Organizations. Online pre-event briefing session was held to support clinical management and administration logistics. Clinical staff (ST and ward nurses) screened patients’ fitness. During the event week from 5th to -9th September 2022, CCE, together with other hospital senior management and department staff, teamed up to deliver the tasty soft meal mooncakes to patients and shared with them the festive joy.
Result & Outcome :
Questionnaires were prepared for patients to comment on the event. Among 232 feedbacks obtained, 93.1% and 95.5% were satisfied with the taste and the appearance of the mooncake respectively. 99.6% of them did not experienced any cough during eating. No choking incident was recorded or reported after the event. Together with utilization of soft meal promotion and cooperation with social service providers, further promulgation of soft meal diet in HKEC is highly anticipated.
